"Worst 5* hotel in Sydney"
I stayed for two nights on business. Unfortunately this hotel does not live up to any 5* standard. There is no attention to detail or help from reception staff and all centralised communication is poor. I also received quite possibly the worst room service breakfast I have ever seen. Very disappointed spend your money elsewhere.

This hotel was in an excellent spot right on Darling harbour The staff was. It's welcoming and friendly. There is lots to chose from at breakfast This was good value for money I would go back and stay at this hotel

Best experience in Hyatt. Staff was very cooperative and during my stay for 8 days there was never any problem. It has direct access to darling harbour on one side and rest of the CBD in other side. Will come again.
"Great place to stay"
Great hotel. Loved the 12th floor bar. The sunset was amazing from there. I was upgraded to a better room as soon as I arrived. Unfortunately the light in the bathroom didn’t work. Luckily I only needed to stay one night at the hotel so it didn’t bother me that much. The location was great as well, literally close to everything you’ll need if you’re coming for business or pleasure.
"Evidence of cost cutting....Sailmaker Restaurant"
This review is for the Friday night dinner at the Sailmaker Restaurant at the Hyatt Regency hotel Sydney. Friday night dinner offers a choice of a seafood buffet (also known as a seafood 'table'), a dessert section, or you can order and pay separately for ala carte options. The seafood table is $65AUD (cheaper if you look out for their Groupon/Living Social deals) and dinner starts at 6pm. There is no time limit. When it first opened a few months ago, the Sailmaker restaurant seafood buffet quality (if not variety) was top notch, large giant prawns, tasty Moreton Bay / Balmain Bugs, freshly shucked oysters, clams, mussels and Blue Swimmer crab. Fast forward a few months later I have been here a few times and noticed cheapening standards each time. First it was the shrinking prawns, and then the Moreton/Balmain Bugs were deleted. Most recently I noticed them serving Vannamei prawns, these prawns from SE Asia are one of the cheapest type you can get, retailing around $16AUD a kilo, compared to $30-$50AUD per kilo for the better quality Australian ones, you can see that someone has been eager to cut costs. Only later (around 8pm did they bring some better quality ones out). The Moreton/Balmain Bugs were deleted, no doubt for cost cutting purposes. The best thing of the night were the freshly shucked oysters, they were fresh and briny. I foresee a time when the Hyatt Regency Sydney bean counters will ask for this to be deleted too. Seafood Options: Vannamei Prawns (thumbs down), Mussels, Blue Swimmer Crab, Freshly shucked oysters, Clams. Other Salad Options: Tuna, Kingfish, Pate, Calamari, Octopus, Capsicum Dessert: Strawberries, Fruit Salad, Cheese plate, Chocolate tart, Hazelnut crème puff, Berry cheesecake, Friands, Trifle. Hot Food: Singapore Chilli Soft Shell Crab (sounded nicer than it tasted, it was pretty average), and a baked Salmon fillet. 1 soup (Kale and Spinach) The Good: Freshly shucked oysters, no time limit, newly refurbished. Most items are good quality. The Bad: Evidence of gradual cost cutting with cheaper ingredients (e.g. Vannamei Prawns) being introduced, and the pricier things like Moreton/Balmain Bugs being deleted. The variety is not that large, it mostly centres on cold seafood and salads. The service can be hit and miss, depending who you get, the main complaint is slow changing of plates and clearing of shell bowls. Suggestions for improvement: *Increase variety e.g. ice cream, crème brulee *Increase quality of offerings, e.g. don't serve the cheap Vannamei prawns. serve Alaskan King Crab legs, Snow Crab legs, Lobster, Moreton Bay Bugs, have both hot and cold seafood e.g. Oysters Kilpatrick, Mornay, Scallops in the shell, Grilled lobster/Bugs with garlic butter, BBQ Freemantle Octopus. *Include some non-seafood options like Roast pork, beef stir fry, bbqed vegetables, mushroom and mozarella arancini. *include tea/coffee
